Busy mornings don’t mean you have to skip a wholesome breakfast. This simple egg and veggie skillet is one of our family’s go-to meals — quick, healthy, and made with whatever’s in the garden or fridge.
Ingredients:
- 2 eggs
- ½ cup chopped vegetables (bell peppers, onions, spinach, or zucchini)
- 1 tbsp olive oil or butter
- Salt & pepper to taste
Instructions:
- Heat oil in a skillet over medium heat.
- Add your veggies and sauté for 3–4 minutes.
- Crack in the eggs and cook to your liking.
- Season and serve with toast or fresh fruit.
Tip: Sprinkle cheese on top or add leftover sausage for extra flavor!
