Easy Farmhouse Breakfast: 10-Minute Egg & Veggie Skillet

Busy mornings don’t mean you have to skip a wholesome breakfast. This simple egg and veggie skillet is one of our family’s go-to meals — quick, healthy, and made with whatever’s in the garden or fridge.

Ingredients:

  • 2 eggs
  • ½ cup chopped vegetables (bell peppers, onions, spinach, or zucchini)
  • 1 tbsp olive oil or butter
  • Salt & pepper to taste

Instructions:

  1. Heat oil in a skillet over medium heat.
  2. Add your veggies and sauté for 3–4 minutes.
  3. Crack in the eggs and cook to your liking.
  4. Season and serve with toast or fresh fruit.

Tip: Sprinkle cheese on top or add leftover sausage for extra flavor!
